So I don’t know how true this is but I read in a book that in Asia, people eat the roots of Kudzu. Do you know anything about that? Do you think that’d be a decent way to start controlling the insanity that Kudzu is in the south if people just started eating it?

The leaves are edible too. 

And it wouldn’t hurt, but the problem is that it grows so fast that I doubt people could eat fast enough to keep up with it. You could eat kudzu three meals a day and it could still outpace you. 

Is kudzu suitable for livestock feed?

Yes! A control effort that is showing promise is using goats to eat it!
